This is our favorite hot sauce in the world. It tastes like paradise in a bottle. We'd even put it on our cereal if we didn't have that addiction to Lucky Charms that decades of expensive psychotherapy have done nothing to slack: marshmallows are the one thing that don't go better with hot sauce.

The secret is the lime juice. (True, vinegar is listed among the ingredients but we can't taste it at all.) When citrus is the acid in a hot sauce, you get the habanero jolt – but the minute you register it, it starts going away. The heat doesn't colonize your tastebuds! This is the way a habanero sauce should be made. Habaneros are not your puny cayenne peppers; they need no fiery enhancements.
