Hot sauce and salsa are condiments made with chile, the brightly colored fruit of plants belonging to the genus Capiscum. Hot sauces fall into three basic types: the ones you cook with, the ones you laugh at, and the ones you buy to hurt your friends. There's overlap, of course. You should be able to find just the right selections to torture your tastebuds or somebody else's among the categories on this page. To make things even more confusing, salsa is the Spanish word for "sauce" though strictly speaking it's not a sauce, it's a cooked or fresh relish prepared with chile and other ingredients that can vary as wildly as a cook's imagination. The classic Mexican salsa is made with tomatoes and cilantro, but there are also fruit salsas, bean salsas, cactus salsas, garlic salsas and even wine salsas. Some analysts who study American eating trends even claim that salsa has become more popular than ketchup! We think there is plenty of room on your refrigerator shelf for both.
